If we are to believe that she did not have any STI before sleeping with Ellis, or at least she was not showing any symptoms, then she probably contracted it when she went back on the game, which probably means both Ellis and Billy are in the clear. I think it is unlikely it was dormant as it was quite a while ago when she was a sex worker previously.
