I have been wondering myself ... Meg is 82 years old, maybe not well enough for filming .. I thought it was odd that Belle is working at the vets in her place....

No, she isn't. Pearl moved to Rhona's off screen when she found out about Will (September 26, 2019). And after she'd been out travelling she decided to be independent and now lives in a caravan in Demdyke (January 10, 2020).

I saw her recently in the cafe in the background

I thought she would feature more when Paddy and Chas had the baby as she is close to Paddy

Rhona and Harriet are also close to her but no real talk of Pearl from them

I hate when older characters leave or cut down their workload so less scenes

A bit odd return for Pearl. Not a line of dialogue in the first episode, then randomly cut in at the café when Priya, Andreas and the other girls were talking. Hope Meg Johnson is ok.
